Explanation
Indicates the very moment an action is in progress, "in the middle of...". Attaches to the te-iru form or の + noun + 最中に; the main clause is an event that occurs.
Examples

A call came in in the middle of the meeting.
食事の最中に、地震がありました。
An earthquake happened in the middle of the meal.
Note
最中に emphasizes the moment of progress; the main clause is often something sudden. Close to ているところに.
